I attended a seminar on fermentation as a food preservation method. Sandor Katz is one of the leading authorities on fermentation. Sandor started his session by discussing the benefits of fermented food and discribing how beneficial bacteria transform simple produce into a nutritional super food. Fermentation is also a process of preserving food without using any energy. Sandor reassured us that there has never been a case of food posioning from anyone eating fermented food. He gave a demonstration of the simplest form of fermentation-making sauerkraut in a mason jar. He ended the session by answering questions. I have tried fermenting a few things this year, so I was very encouraged and excited to be able to hear Sandor in person and purchase his book, The Art of Fermentation.
