When we got home, we had to do some serious catching up. The beets and the pinto beans were ready to harvest. We spent a couple of pleasant afternoons on the front porch prepping veggies. We processed beet greens, canned beets and made pickled beets. We shelled the beans and canned them too. I tried my hand at lacto-fermentation using tomatoes and zucchini. We also had scads of cucumbers and made several kinds of pickles. Not sure if we’re going to catch up any time soon as the tomatoes are coming on full force!
